Welcome To Cielo Sauce Works!

We thought we would tell you a bit about our company and ourselves. Let’s start from the beginning...Cielo (pronounced Chee-el-o) is Italian for “heaven” which we thought appropriate for our wonderful sauces. They are a little taste of heaven, so we are told.

We are Walter and Tracey Tolson, of beautiful Gorham Maine. Both my husband and I (a chef by trade), consider ourselves extremely lucky to have grown up in households where food always seemed to play a large part in our daily lives. So I think our pasta sauce was a natural progression. Both our family’s holidays and get-to-gethers seemed to always center around the meal. And what great meals they were. Everyone in my family (a mixture of Irish, Polish, Russian, and Austrian) are great cooks and my husband is the luckiest by far I think, he has an Irish father and an Italian Mom! Just for the record, my mother-in-law Lucy makes the best Italian food on the planet. She alone was my inspiration for Cielo Sauces. Although she never wrote down her recipe, every time she made it, it was perfect. So I took the list of ingredients I was lucky enough to get from her and experimented with my sauce recipe. Till finally I came up with what my husband and countless friends and acquaintances think is “a little taste of heaven”. Cielo!

We produce all our sauces right here in Gorham, Maine with the finest ingredients, simmered slowly in small batches to thicken our sauces naturally. This concentrates the simple yet wonderful flavors and makes our sauce rich, sweet and full bodied (we add a touch of red wine too). We never use MSG or any starches or modifiers ever, our sauces are 100% gluten and dairy free to provide the best tasting and healthy sauces for you and your family. No longer do you have to compromise on flavor because of special allergy requirements or make two separate meals because all of your family members don’t require special dietary menus. Now everyone can share in a great tasting meal without sacrificing anything.
